5 lbs La Fe Yuca peeled
FOR GARLIC SAUCE (substitute with La Fe Mojo Sauce)
3 Tablespoon Minced Onion
3 Cloves Garlic crushed
3 Tablespoon Parsley minced
3 Tablespoon Cilantro minced
2 Tablespoons La Fe Hot Sauce
1/4 Cup + 2 Tablespoons of Red Wine Vinegar (can substitute with La Fe Apple Cider Vinegar but check portion for taste)
1/2 Cup + 1 Tablespoon of La Fe Vegetable Oil
Salt And Pepper to taste
Boil the peeled La Fe Yuca in a large pot of salted water until fork tender (about 15-20 minutes) – Do not overcook or they will turn mushy.
Strain the pot and cut the yuca into strips.
Remove central vein and let cool.
FOR MOJO SAUCE
Place all ingredients together in a bowl and mix until combined. Add more La Fe Hot Sauce if desired.
TO GRILL YUCA
Brush each yuca generously with mojo sauce on all sides (substitute with La Fe Mojo Sauce)
Place them on the grill on indirect heat and close the lid
Grill until crispy (about 15-20 minutes)
Serve with mojo sauce on the side for dipping.
