Ingredients

    La Fe Frozen Peppers and Onions

    2 tsp olive oil

    8 slices rye bread

    2 tbsp mayonnaise

    1 cup canned diced tomatoes, drained / fresh chopped tomatoes

    FOR THE SHREDDED MEXICAN CHEESE BLEND:

    1/4 cups La Fe Mozzarella

    1/4 cup  La Fe Queso de Papa

    1/4 cup La Fe Cotjia Cheese

    2 tbsp butter, softened

Directions

  • STEP ONE

    In a small skill, saute La Fe frozen peppers and onions in La Fe vegetable oil until tender. Spread 4 bread slices with mayonnaise. Layer with peppers, tomatoes and La Fe cheese blend. Top with remaining bread. Butter outsides of sandwiches.

  • STEP TWO

    In a small over medium heat, toast sandwiches for 2-4 minutes on each side or until cheese is melted.
