Ingredients
3 tablespoons LaFe Vegetable Oil
¼ cup red onion chopped
¼ cup red bell pepper chopped
1 bag LaFe Frozen Vegetables
4 cups LaFe Jasmine Rice, cooked
1 boneless skinless, chicken breast, cooked and cubed
4 tablespoons soy sauce
2 eggs scrambled
2 tablespoons green onions

Directions

STEP ONE
Heat the oil over high heat in a large pan. Add the thawed vegetables and stir; let cook for about 1 minute.

STEP TWO
Add the onion and peppers and stir for about 2 minutes. Add rice. Mix well until there are not clumps of rice left. Add the soy sauce and mix well.

STEP THREE
Add cooked chicken, eggs and green onions. Mix until well combined.

STEP FOUR
Remove from the heat and serve. Garnish with green onions.
