3 cups water (or whole milk)
5 tablespoons of La Fe Brown Sugar
1/3 cup masa harina
1/4 cup water (warm)
1/4 teaspoon ground cinnamon (or 1 cinnamon stick)
2 teaspoons Mexican vanilla (good-quality or 1 vanilla bean)
Pinch of salt
Begin by heating the water or milk in a medium-sized saucepan. Following this add in the La Fe Brown Sugar, cook and stir until the brown sugar has dissolved. If you are using milk, use low heat to avoid a quick boil and spillage.
After the brown sugar has dissolved, create the masa harina mixture by blending the masa with ¼ cup of warm water. Make sure to stir aggressively to avoid clumps of corn flour.
Now add the masa mixture, vanilla, cinnamon (or cinnamon stick) and salt to the pot. Make sure to stir evenly for 1 minute so that the ingredients permeate throughout.
Once you have a balanced mixture, bring the pot to a simmer and continue to cook, making sure to stir frequently. This process should take roughly 20 to 25 minutes, or until the mixture has thickened. The Atole should be thick, creamy and velvety.
After you have achieved the proper consistency, remove the cinnamon stick and vanilla bean.
Pour the Atole into coffee mugs and enjoy this delicious delight!
